Salmon with Cilantro and Garlic Served Over Orzo


This recipe was inspired by My Columbian Recipes, I loved the simplicity and freshness of the dish and Salmon is so tasty and good for you.

Ingredients:
  • Salmon fillets, I used Wild Alaskan.
  • 3 cloves of garlic
  • 1/2 a bunch of fresh cilantro
  • salt and pepper
  • olive oil 
  • lime juice to taste
Method: 
  1. blend the cilantro, salt and pepper, olive oil, lime juice and garlic together.
  2. spread over the salmon and pan fry with a lid on it about 5 minutes on each side
  3. then when cooked add more of the glaze
It was eaten over a bed of orzo and broccoli. The Orzo was simply boiled to el dente then I mixed in 2 triangles of laughing cow swiss cheese with a little of the garlic/cilantro mix.

  2. I try to eat fish at least once a week because its so healthy for us and I really enjoy it. This is a perfect way to serve salmon.

  3. I love salmon...LOVE it. I might marry it. HA HA Seriously though, I'm always looking for new ways to make it so this will be a keeper. I've never made Orzo though ~ I'm sure it's easy, I've just never tried it. I've never tried cous cous either and that's another one I think would be easy to make.   4. I love orzo, such a fun pasta to work with and so versatile too. I've started using it instead of the Israeli Coucous which is so expensive and hard to find!

  7. Looks so tasty. Lots of salmon around here (not that I have seen any fresh, but certainly frozen) so I'll have to give that a try at some point. So many god receipes so little time.

  14. It's sort of like you've made a cilantro pesto for the salmon. Very nice. You could save the extra cilantro/garlic mixture and toss it into some leftover orzo for lunch the next day - that would kind of rule.

  33. Wow! This is so similar to the Indian green fish dish we regularly cook!! Adding a little mint and a couple of green peppers (Thai or Serrano) truly zings this dish up for us as we love our food spicy. Thanks so much for posting this.
