Cobblestone Farmers Market


So excited as my local farmers market in downtown Winston Salem NC has just started back up again on the corner of Patterson and third street on Tuesday mornings. It features a good selection of seasonal produce, organic grass fed meats and fresh breads. You can also find soaps and other homemade items.  Its fun to chat with the farmers get tips and learn about the growing process. Cous Cous and Black Bean Patties



These cous cous patties were inspired by this post, I remember seeing this and thinking genius as I often have leftover cous cous in my fridge. I loved that she added cheese, I tried a little but must confess struggled to keep mine stuck together. I served with home grown green salad.


Ingredients:

  • one cup of leftover cous cous
  • 1/4 cup black beans 
  • one egg 
  • olive oil for pan frying 
Method:

  1. mix cous cous with the egg and black beans and form into a pattie lightly pan fry in olive oil, mine were a tad crumbly hope you have better luck. 
  2. but they tasted good and with the black beans would make a fun veggie burger. 

Hope your all having a lovely week, just a couple more day's with my parents they leave Thursday will be sad to see them go :-( but looking forward to getting back into a groove and routine.

Oatmeal Pancakes


I adore pancakes for breakfast and these oatmeal pancakes are truly a gem,  I was inspired by a recipe in the LA Times Food section, another Newspaper I enjoy especially their cooking tips video tutorials. You grind oatmeal in a grinder and add to pancake mix, I used a coffee grinder and the really good thing is you get whole grain cereal :-) 



Ingredients:

makes about 6 small pancakes
  • one cup of ground oats
  • one cup of self raising flour
  • about a cup of milk or enough to make a nice batter
  • one egg 
Method:
  1. grind the oats and mix with the flour
  2. add the egg and milk and use a hand blender to mix into a batter 
  3. heat a hot pan with a little canola oil and cook, they make nice fluffy pancakes
  4. perfect with maple syrup and fresh fruit

Salmon with Sauteed Spinach over Quinoa


I recently made this for dinner, easy to put to together nutrient rich and tasty, hubby and kids approved :-) I even made a little milk sauce and blended the spinach and salmon in it for my baby :)

Visit to Nebraska



We have been in Nebraska the last few days, visiting my brother and sister in law here and I had the pleasure of speaking at The Nebraska State Dietitians meeting on social meeting. I had the best time, the opportunity came from meeting @RDAmber on twitter and it was a Joy to meet her in person, instant friends. My Dad came along for the ride to Nebraska city and watched too funny. The audience seemed to like it :-)

Mango Lassi




This is a deliciously simple drink and oh so good. We all love this especially our little guy. Mangoes are wonderfully sweet and pair perfectly with natural yogurt, no extra sugar is needed and it makes a wonderful treat for warm days.

Sole in a Chinese Style Black Bean Sauce




I asked my Dad yesterday if we had any Easter traditions around food growing up and really the only one was eating fish on Good Friday and of course having chocolate eggs. Here's a nice simple recipe for sole or any white fish in a Chinese style black bean sauce.

Roasted Patty Pan and Eggplant Farfalle




I found patty pan squash recently in whole foods and fell in love with the cute shape, like mini flying saucers I think they were sourced from Mexico and are in season in the Summer. Great nutritionally high in Vitamin C, folate, Vitamin A, Potassium and Magnesium. I decided to roast them with eggplant on the day of purchase as after reading I found out that they can spoil quickly. This was a lovely meal and one to try again, who knows now I am gardening I may even try my hand at growing them. 




Ingredients:

  • one cup of patty pan squash cut into halves
  • 1/2 a big eggplant diced
  • 4 cloves of chopped garlic 
  • 3 small tomatoes chopped
  • 1/2 a red onion 
  • salt to taste 
  • 1/2 teaspoon of Italian herbs 
Method:

  1. add eggplant and patty pan to a roasting tray drizzle with olive oil and sprinkle with sea salt, add garlic and bake at 400 for about 10 min until soft 
  2. saute onion in olive oil with a 1/2 a teaspoon of Italian herbs add tomato and let it reduce down to a sauce takes 5-10 minutes
  3. add roasted vegetables and serve with pasta of choice.





Its been a busy few days here, getting ready for my parents coming, cleaning house, excited to see them on Thursday. Then next week we are all going to Omaha to visit my brother and sister in Law there and I am speaking on social media at the State Dietetic meeting :-)
