Yule log


This is a fun cake to make, I basically made a vanilla Swiss roll and coated it in chocolate buttercream so good.

Ingredients for the Swiss roll
  • 3 large eggs
  • 100g sugar, plus extra 3 tbsp to dust
  • 1 tsp vanilla extract
  • 100g plain flour
  • ½ tsp baking powder
  • 1/2 a jar strawberry jam
Ingredients for the chocolate buttercream
  • 1/4 cup of cocoa 
  • 1/2 a cup of confectioners sugar 
  • one - two tablespoon of milk 
  • 3/4 of a stick of butter
Method
  1. Heat the oven to 200C 450 F. Add parchment paper to a cookie sheet, apparently there are Swiss Roll pans this would be perfect. 
  2.  Whisk the eggs and sugar with an electric hand whisk until thick and pale, this took a good 15 min but maybe with a better whisk its faster. Add the vanilla and whisk for another few seconds. Then fold in the flour and baking powder little by little. 
  3.  pour into the tin and lightly smooth the top. Bake for 10-12 minutes until golden and springy.

  4. cut a large rectangle of baking paper. Dust the paper with the sugar. Once the cake is cooked, carefully place the sponge onto the sugared paper and peel off the paper. then spread the jam and roll with paper and allow to sit for an hour.
  5. meanwhile mix the butter, cocoa powder and confectioners sugar with milk if needed to have a smooth consistency. Coat the roll with the buttercream and add a couple of marshmallows cut into the shape of mushrooms.

Chickpea, Barley and Kale Soup

This soup ticks those boxes with lots of flavors, vegetables, whole grains, and fiber.

These simple shortbread cookies are easy to make and lovely. I made them on the first day of our daughter's High School. Can you believe she is now in High School I started this blog when she was a baby! Our son is also doing well and is now in 5th grade the big kid in school.

Kotagiri, India


On a recent trip to India, we visited the lovely Hill Station of Kotagiri in Tamil Nadu India. I choose this area as it has some lovely small resorts we stayed in Green Nest Resort and it is much less developed than Ooty. This area is beautiful and abundant in wildlife and it's great to see tea growing all around.

The Arabian Teahouse, Dubai


We have recently returned from a wonderful trip to Europe and India to see family. On the way to India, we visited Dubai it is my second time visiting its a fascinating place. Very modern and high tech with with lots of "biggest" things, the world's biggest building, the biggest picture frame, the biggest diving pool the list goes on. 
I admire how the United Arab Emirates has a plan for the future, attracts folks from around the world to live and work there, and it focuses on Tourism.

Lime, Ginger and Mint Spritzer


This is a deliciously easy and refreshing drink perfect for warm weather. It was inspired by a drink I had in the Cayman islands, that reminded me of the flavors of a mojito. 



LIME, MINT AND GINGER SPRITZER

Add fresh mint leaves to a jug, about 3 teaspoon of lime juice/ syrup, a small knob of grated fresh ginger, sugar to taste and serve over ice. Garnish with edible flowers.

Minestone Soup




This is a super simple soup, flavorful and easy to make. 

Minestrone soup 

Ingredients -
  • 5 carrots chopped 
  • 1/2 onion chopped 
  • 3 cloves of garlic chopped 
  • 2 celery sticks chopped 
  • A handful of chopped spinach and a handful of chopped kale 
  • A can of cannelloni beans 
  • A liter of vegetable stock
  • A can of tomatoes 
  • 1 teaspoon Italian herbs, chipotle pepper and salt to taste 
  • 2 tablespoons of barley 
  • 1/2 cup macaroni 
  • 1 cup water 
Method 

1. Sauté onion, celery, garlic, and carrot in olive oil for 5-10 min add kale and spinach 
2. Then add stock, can of beans and tomatoes simmer for 15 -20 min 
3. Add pasta and barley maybe a little more water and simmer 10 min 

In other news we just returned from a trip to the UK to see family we nearly cancelled many times as we were worried about covid, it was a tad stressful with the testing and always trying to be safe for ourselves and others, but so happy we went. Here is a little clip of our trip below.
