Beans and Rice



Last night I made black beans and rice, so easy and healthy 

here's the recipe

Ingredients
  • 1 can black beans
  • little salt, paprika
  •  a little chilli sauce
  • 1/2 chopped tomato
  •  2 cloves of garlic
  • 1/2 red or green pepper
  •  1/2 red onion,
  • little tomato paste
Method:
1. Fry onions, garlic, chilli sauce - little, salt, pepper in canola oil, after a little while add tomato and tomato paste and let reduce down 
2. Wash beans then add to pot 
3. Simmer for 15 min
and its ready, great served with rice, scrambled egg and steamed vegetables. Also great with fried plantains!
Black beans are a great source of protein (15g/cup), fiber (15g cup), Iron (3.61mg/cup) and folate

  2. Looks fantastic! I've been reading a lot of books about vegetarianism (since I married one) and I learned that rice and beans was the healthiest way to have a complete meal (balanced in proteins).   8. I wish I could go vegetarian,but I seem to need animal protein. I love black beans and rice but treat it more as a side dish than an entree.

  9. Ah! Beans and rice is such a favorite dish on our table. I usually add a protein, however, and yet only enough to give it some flavor and texture. Although we still eat meat, I'd like to think that my husband and I have moved to being more 'flexitarian' - that is, that animal protein no longer makes up the majority of our meals. And I agree: Indian cuisine is marvelous for meatfree dishes that aren't simply large portions of a side dish!

  19. I love a simple rice and beans. I've had to make all my beans from dried here. I enjoy it, but I am looking forward to the ability to grab a quick can when I don't want to spend all day making a dish that uses them. Looks tasty!
