Easy Vegetable Pilaf

We came back from NYC on Sunday we had no food in the house, just 1/2 onion, curry leaves and some garlic in the fridge. So I got creative googled vegetable pilaf recipes and opted for frozen vegetables, it was fast tasty and healthy.

Ingredients:

  • one stick of cinnamon
  • 3 cloves
  • cumin seeds
  • 2 dried red chili's
  • 3 cloves of chopped garlic
  • 1/2 red onion chopped
  • one spoon garam masala powder
  • 3 bay leaves
  • a few curry leaves
  • spoon coriander powder
  • teaspoon of turmeric
  • one cup of basmati rice
  • 2-3 cups of water
  • salt to taste
  • lots of frozen vegetables
Method:

  1. heat some canola oil and add all the spices with onions saute for 3 minutes
  2. add vegetables and saute another few minutes
  3. then add the rice and water, bring to a boil, turn down low and simmer for 20 minutes

All is all great and easy dish, but may dear Indian readers feel free to send links to theirs or comment on how to perfect it, much appreciated.

So tomorrow the winner of the giveaway will be announced!
