Baba Ganoush

I had a huge eggplant to use so I went on google and decided to make Baba Ganoush. A popular spread/ dip from the Middle East.
I looked at the recipes and discovered I needed tahini I didn't have any so I quickly made this as well. Its a healthy snack high in potassium, manganese, vitamin C and fiber. It is pretty high in calories though with the olive oil, so its a great treat to share.


Roasting sesame seeds

Tahini

Ingredients:
  • 1/2 jar of sesame seeds
  • olive oil
Method:
  1. roast sesame seeds in hot oven (400) for 5 - 10 minutes, be careful not to burn
  2. allow them to cool then grind with olive oil.
Baba Ganoush:

Ingredients:
  • one large eggplant
  • fresh parsley 1/2 cup or dried one tablespoon
  • one teaspoon cumin powder
  • salt to taste
  • 4 cloves of garlic
  • olive oil
  • lemon juice
  • tahini
Method:
  1. slice the eggplant and roast in the oven (350 degree's) for 25-30 minutes until it gets soft, then allow it to cool
  2. grind the eggplant with the garlic, lemon juice, parsley, cumin, salt and olive oil and tahini.

Go on get you a chip or better still pita bread and dig in!

  11. Love babaganoush, but some how mine doesnt turn out quite well so far maybe should add tahini, didnt add before because i couldnt get one, will try your sesame seed method

  15. Oh I love baba ganoush. I like to roast the eggplant on the charcoal grill in the summer time and then make it up. Its a real treat.

  17. Oh, looks healthily delish! I wouldn't think of throwing eggplants into dips as it's not part of our culture ... The veggie always finds its way into our wok, LOL!

  32. Reminds me of "Baingan ka bharta"!! Not a big fan of eggplants(or brinjal as it's called in India).Hubby loves 'bhartha'-so I'm guessing that he'll like this too :)

    Aubergines can be delicious if treated right.
