Carrot and Cauliflower Soup

Lets start 2010 with a nice healthy recipe, a wonderfully simple and flavorful soup. I hope you all had a wonderful new years eve. We stayed home my friend came over with her baby and I made my first Beef Bourguignon! recipe to follow. It was wonderful my hubby even licked his plate (but he didn't want me to say that so mums the word)!

In 2010, I want to continue blogging and learning new recipes with your support, amazing comments, food blogs and tips I can cook anything, well almost!
I even joined Michelle's (Big Black Dog) bread making group yesterday I am a bit nervous but until I step out of my comfort zone I will never learn right!

Ingredients:
  • 4 big carrots
  • 1/2 red onion
  • 2 cloves of garlic
  • 1.2 l vegetable stock
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp garam masala powder
  • salt and pepper to taste
  • fresh coriander/cilantro
  • one cup small red lentils
  • 1/2 head of cauliflower
  • 2 sticks of celery chopped
Method:
  1. heat oil and add onions and carrots, celery and cauliflower then add spices
  2. add broth and lentils and simmer for 30-45 min until very soft
  3. use a hand blender to make into a puree
  4. then add fresh chopped fresh cilantro

Love and Hugs, may 2010 be filled with fun, laughter and adventure in the kitchen!

I am sending this over to Deb at Souper Sundays

I need to start my New Year out on a healthy foot, too. I like your goal of learning how to bake bread.

I definitely need some soup, only I'm staying at my in-laws and they seem scared of anything you should eat with a spoon. What my MIL calls soup is something you can eat with a fork.
Can't wait to get home, back in my kitchen and cook some really good stuff.
My husband needs to start a low sodium diet, would love to hear any advice you have to share.
Have a beautiful year to follow this day and to enjoy with your family

I'm so excited you joined the bread making group! We are going to have so much fun together. I promise it's not difficult at all. Basically all you do is mix, rise, refrigerate. How hard can that be?

This soup looks awesome. I could use some healthier dishes in the new year...

That is great you are stepping out of your comfort zone and trying new challenges! I'm not much of a baker (I wish I was). I can cook most anything, but baking...is another story!

This soup looks amazing. I love soups like this pumpkin, squash, potato leek, now carrot califlower, can't wait to try it!
