Panko, Basil and Asiago Crusted Pork



Heres another simple dish from Rebecca's kitchen, you know me well enough to know thats what I am all about :-) especially lately.

I have been hooked using panko after making the Asian Inspired Crab cakes so wanted to try coating something else. I coated pork with panko, fresh basil and Asiago cheese very tasty and ate it with ratatouille and  Greek roasted potatoes 





Ingredients:


  • 4 small thin slices of pork
  • one egg beaten
  • 1/2 a bunch freshly chopped basil
  • about 2 tablespoon of asiago cheese
  • about 1 cup panko breadcrumbs
  • salt and pepper to taste
Method:

  1. dip the pork in the beaten egg 
  2. then coat with salt and pepper, panko, basil and asiago
  3. lightly pan fry in olive oil for 5 minutes on each side transfer to the oven at 350 for another 10 minutes 
  4. serve with potatoes and ratatouille links are above or a seasonal salad 
I am taking it easy, and staying indoors in the afternoons with the heat and preparing for the arrival of our little boy due August 24th so now in the last few weeks :-), excited and nervous about the delivery as all Mums are. I had an emergency c section and induction last time and am trying for a natural birth this time.  We have hired a doula for support and God willing, fingers crossed it will go well. Please pray for us :-)

  2. Looks delicious and I love simple too :-). I think I read somewhere recently about gluten-free Panko so I'll have to look for that. Prayers are with you for an easy delivery!

  11. I'm hooked on Panko too! I love that it's a great crust for frying, but also bakes really beautifully too :) Way crunchier than baking something breaded with regular breadcrumbs.
