Ratatouille and Penne

I have been craving light simple meals lately pregnancy does that to me, plus its good for us :-) so I made a simple ratatouille seasoning with Herbs de Provence, fresh vegetables and heirloom tomatoes and mixed with penne.

Ingredients:

  • one cup of penne cooked til al dente
  • one yellow squash diced
  • one zucchini diced
  • 4 cloves of chopped garlic
  • one large hierloom tomato
  • one carrot chopped
  • one teaspoon herbs de provence
  • 2 shallots chopped
Method:

  1. saute the shallots and garlic in olive oil for a few minutes
  2. then ad all the vegetables and saute for 5 minutes
  3. add the tomato and simmer for 15 minutes until cooked
  4. mix with penne and serve
Last day in the UK tomorrow spending it in Windsor so pretty here and close to Heathrow big family meet up tomorrow, its been an amazing trip and Jasmine has enjoyed getting to know her family. Will miss everyone so much but will be good to be home in the US back in a routine and seeing my American buddies.

Have a great weekend all

Hugs

  1. That is my kind of meal! I could eat that every night and not get bored of it.

I am so happy to hear that the UK break has been so happy and memorable for you both. It must be so wonderful seeing your family.

Do have a safe trip home and take care of yourself and your precious family (and bump!)

    Best wishes always,

  16. Eating was hard for my pregnant self I remember, only wanted chocolate and Tex-Mex food. An occasional been burrito with green sauce would suffice. Afterward I went back to my love of pasta, but now...a little goes a long way...this dish looks great! I love herbs de provence!

Glad you had such a great time on your trip...saying goodbye is hard isn't it :(
