Roasted Sweet Pepper and Mint over Penne


I made this simple roasted pepper pasta recently, its so simple to prepare and has a delightful sweet and smoky taste. I roasted a small yellow, orange and red pepper full of antioxidants and very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin K, Vitamin B6, Potassium and Manganese.



Ingredients:

  • 3 small peppers, yellow, red and orange 
  • 3 cloves of garlic
  • salt and pepper to taste 
  • olive oil
  • a few fresh mint leaves 
  • any desired pasta, I used penne
Method:

  1. slice the peppers and drizzle with salt and pepper and olive oil bake at 350 degrees with the garlic for 20 minutes until soft then blend with a little water to make sauce
  2. boil the pasta till al dente 
  3. mix with the sauce and a few mint leaves 
  4. enjoy 
Must be one of the easiest meals in the world he he :-)

  2. Lovely! Roasted pepper is one of my classic favorite flavors. I'm not creative enough to think of too much besides dip for it though...this is great!
