Spicy Indian Carrots


I learnt this simple Indian side dish from my sister in law. Super easy and tasty a tad sweet but something new for me thats always a good thing to try new things in my book. 



Ingredients:

  • 8 carrots grated
  • a little oil
  • a pinch of fennel seeds
  • one bay leaf 
  • salt to taste 
  • one chilli
  • one tablespoon of grated coconut
  • pinch of tumeric 
Method:

  1. saute the carrots in a little oil with the spices for 15-20 minutes until soft, near the end stir in the coconut 
  2.  its that simple
My sis in law mentioned that when she was short of time she would make this and mix with rice and take to work, pretty healthy rich in beta carotene, vitamin C and fiber.
