Cod in a Miso and Plum Sauce


I am still enjoying experimenting with miso in the kitchen. So next up is a dish with cod, miso and a little plum sauce. It was easy to make a tad sweet but all in all a fun dish.

Ingredients:


  • 2 tablespoon of mirin
  • 2 tablespoon of sake 
  • 1/3 cup of sugar 
  • 1/4 cup of miso paste
  • one tablespoon plum sauce 
Method:

  1. heat the mirin and sake in a pan for a few minutes then add the miso and sugar 
  2. cook for 5 minutes add plum sauce, allow it to cool then pour over the fish and marinate for 2-3 hours
  3. poach in a pan for about 10 minutes or until its just cooked
  4. eat with rice and vegetables

  9. I'm glad you like Miso, Rebecca. We often marinate cod in miso and mirin for a few hours and just broil it. I'll need to post that dish because it's so easy to cook and so delicious!
