Easy Spinach Dal

I made this simple Indian spinach dal the other day, I have found that I tend to alternative other cuisines be it Italian, Asian, British with Indian so hubby doesn't miss out on the food he enjoys. Also our little one will happily eat dal with rice. Dal is great tasting rich in protein and satisfying.

Ingredients:

  • one cup of toor dal and about two cups of water
  • 3 cloves of garlic
  • one teaspoon of sambar powder - found in Indian stores
  • one bunch of chopped spinach
  • salt to taste
  • a pinch of cumin seeds
  • one red chili
  • a pinch of coriander powder
  • a pinch of mustard seeds
  • 1/2 a red onion chopped
  • 1/2 a chopped tomato
Method:

  1. pressure cook the dal with the tomato, a little garlic and onion for 2-3 whistles (for toor dal less if you use red lentils) or boil for 45- one hr until soft
  2. heat a little canola oil and pop the mustard seeds, add the cumin seeds, onion, garlic and chili and saute add sambar powder, turmeric and coriander powder- add to cooked dal
  3. then add the chopped spinach and let it boil for 5-10 minutes until cooked
  4. serve with rice :-)
Who makes dal at home?

and enjoy the weekend
