Mexican Inspired Brown Rice with Beans


This is a super easy healthy recipe rich in fiber and protein from the beans and the brown rice, do you know a recent study found that folks who ate more brown rice than white had a lower risk of diabetes

 I know I need to eat more of it!

Ingredients:

  • one cup of brown rice
  • one packet of Goya Chicken Bouillon 
  • one can of drained and rinsed black beans
  • 1/2 a red onion chopped
  • 3 cloves of chopped garlic
  • 1/2 a green pepper chopped
  • 1/2 a chopped tomato
Method:

  1. heat a little olive oil and saute the onion and garlic for 5 minutes 
  2. then add the green pepper and tomato
  3. after a few minutes add the uncooked rice and stir, then add the beans, and 2 1/2 cups of chicken stock, cover the pan and simmer until the rice is cooked about 15-20 minutes.
Enjoy its great with egg!

  6. That looks great and I love the hard boiled egg. I have a bunch of brown rice, and I guess I need to think about what to do with it. I love it mixed with veggies and tofu.

  8. Love brown rice-I can assume folks that are eating brown rice on a regular basis are probably are people who are eating better overall.

    This would be a great weeknight meal.

  18. Yup Brown rice is the healthier option though I usually mix half of brown and white so that it is easy to eat cos brown rice can be a bit more coarse and rough to eat. This is so I don't reject brown rice completely :)
