Best,

Skylar Griggs MS, RD

With summer quickly approaching, the perfect BBQ side dish is a must! This refreshingly cool summer salad will be a seasonal staple. The salad is quick, easy and can act as a side, or even a dip paired with tortilla chips (whole wheat of course)!

Sky’s Summer Salad

  • 16 oz of canned black beans, rinsed and drained
  • 1 8 oz canned corn, rinsed and drained
  • 1 cucumber, chopped
  • 2 carrots, peeled and chopped
  • 3 celery stalk, chopped
  • 3 green peppers, chopped
  • 1 onion, chopped
  • 1/2 cup olive oil
  • 1/2 cup white vinegar
  • 2 tablespoon lemon juice
  • 4 cloves garlic, crushed
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon ground black pepper
  • 1/2 teaspoon chili powder

Directions:

  1. Prepare all ingredients
  2. Combine together in serving bowl
  3. Garnish with lemons

Prep/cook time: ~20 minutes

Serves: 8-12
