Italian Seasoned Salmon with Salad and Cous Cous


I made this a little while before coming to the UK its super simple and full of flavor lovely for spring. I have had a fantastic week in Scotland with Mum and Dad now taking the train South to Lincolnshire tomorrow to stay at my Grandparents and also see hubby's family more :-) I do miss the bright sunshine of North Carolina a little though its been rainy of and on the last few days in Scotland. This dish is full of sunshine to me :-)



Ingredients:

  • 2 pieces of wild Alaskan Salmon
  • about a tablespoon of Italian herbs
  • salt and pepper to taste
  • good olive oil
  • cous cous
  • greens, a few cherry tomatoes and manderin oranges for the salad,
  • a little balsamic vinegar and olive oil
Method:

  1. marinate the salmon in herbs and olive oil and let it sit for one hour in the fridge
  2. simply poach the salmon in a good pan for 5 minutes each side
  3. meanwhile cook the cous cous
  4. put the salad together and drizzle with oil and vinegar
  5. enjoy :-)
