Red Cabbage and Vegetable Noodles

Heres a lovely vegetable noodle dish you can put together in no time, its has a delicate flavor and lovely color with the red/purple cabbage. I love meals like this when I don't have much time and want a quick and nutritious meal and the little one loves noodles.

Ingredients:

  • a small pack of Chinese egg noodles
  • 1/2 a zucchini thinly sliced
  • 1/4 of a small red cabbage thinly sliced
  • 1/2 a yellow squash thinly sliced
  • one small carrot thinly sliced
  • 1/2 a red onion thinly sliced
  • one teaspoon of ginger/garlic paste
  • a dash of sesame oil
  • 1-2 tablespoon of soy sauce
  • 1 tablespoon of oyster sauce
  • one teaspoon of 5 spice
Method:

  1. saute the vegetable in a wok in a little canola oil, ginger/garlic paste, a dash of sesame oil and 5 spice till al dente about 5-7 on a high heat
  2. meanwhile cook the noodles
  3. add soy sauce and oyster sauce and toss in the noodles
  4. and enjoy :-)
Have you cooked with red cabbage?
