Lemon and Coconut Cake


I had a lemon sitting all by itself and I figured why not add it to a cake! so heres a lovely fresh cake recipe for Spring, it only lasted 2 days and I think this was Jasmines favorite cake so far, she now says cake!

Ingredients
  • 4 oz of butter
  • 4 oz of flour
  • 4 oz of sugar
  • the juice of one lemon
  • 1/4 cup shredded coconut
  • 2 eggs
  • 4 oz of self raising flour
  • icing sugar for dusting
Method:
  1. cream the butter and the sugar I used my new mixer that I won on La Bella Cooks blog!
  2. then add the eggs, flour, coconut and lemon juice
  3. bake at 350 for 30-40 minutes
  4. then dust with icing sugar

  28. Coconut is by far my favorite fruit of all time. What I find interesting is the combination with lemon. I have tried it once before, and it was amazing. Keep up the great work with your blog.

    I made some appetizers to take to a family gathering for Easter and our little six year old niece liked them so much she told my sister-in-law, "Sam is a good cooker." I'll take that compliment any day.
