Lotus Root Stir fry with Noodles

So here's another recipe for lotus root, I used it in a simple stir fry and mixed with Chinese egg noodles, and vegetables we love meals like this in our home.

Ingredients:

  • 1/2 a pack of lotus root
  • 1/2 cup of shrimp
  • 1/2 a bunch of broccoli chopped
  • one teaspoon of ginger/garlic paste
  • 2 tablespoon soy sauce
  • a dash of sesame oil
  • 2 tablespoon oyster sauce
  • 1/4 cup of fresh Thai basil  - if you can get it :-)
  • one cup of chopped baby bok choy
  • one packet of Chinese egg noodles
Method:
  1. heat a little canola oil and add sesame oil
  2. then add the ginger/garlic paste
  3. and the bok choy, broccoli and basil cook for 7-10 minutes
  4. add the shrimp cook for 3-5 minutes until cooked add sauces
  5. meanwhile boil the noodles then combine
  6. serve :-)
