Dominican Republic Red Beans and Rice




This recipe was inspired by a post by the lovely Nelly of Cooking with Books, its basically like her recipe but I didn't have celery. Simple to make, healthy (well Ok it has a little bacon in it but thats ok in my book) and tasty. 




Ingredients:

  • one can of red kidney beans 
  • one cup vegetable stock
  • 2 rashers of bacon
  • 1/2 red onion chopped 
  • 1/4 green pepper chopped 
  • 2 small tomatoes chopped 
  • salt and pepper to taste 
  • 3 cloves of garlic chopped 
Method:

  1. chop and cook the bacon
  2. add the green pepper, onion and garlic and saute for 5-10 minutes add tomato and stock 
  3. then add the beans and simmer for 20 minutes 
  4. serve with rice and enjoy 
Things are fine here, can't believe little Roshan will be a month old on tuesday really enjoying him and slowly adjusting to having two kiddies, although is a struggle to get Jasmine to preschool on time he he
