Black Bean and Corn Soup


I made this super easy soup recently nice and tasty but will be glad when the little one likes spice as it needed a kick ;-) Hope your having a good week, I am doing well, I had my third social media coaching client today having so much fun with this new venture. Then next week I am speaking about app development to Linking Greensboro a business networking meeting. Eek a little nervous as 45 people will be there, wish me luck.



Ingredients:

  • one can of black beans
  • 1/2 a red onion sliced
  • one teaspoon of cumin powder
  • salt to taste
  • about 1/2 a cup of frozen corn
  • 1/2 a green pepper chopped
  • 4 cloves of garlic chopped
  • a dash of smoked Spanish Paprika
  • about a tablespoon of tomato paste
  • one small tomato chopped
  • some chopped fresh cilantro
  • about 2 cups of water or vegetable stock 
Method:

  1. saute the onions, green pepper and garlic in olive oil for 5 minutes 
  2. add the tomato and let it form a paste
  3. add the cumin, salt and paprika 
  4. then add the black beans, corn and a little water with some tomato paste and simmer for 15-20 minutes
  5. garnish with chopped cilantro
note: this dish would be great with a couple of chili's in it and a makeover by Girlichef !

  6. You know you can use any recipe of mine, Rebecca. We're friends for one thing and for another, there are no "secret" recipes on my site! Maida Heatter is a southern cook and citrus is southern....feel free. :) I posted a fabulous orange sunshine cake and while back with an unusual fruit filling. Divine for summer.
