Banana and Blueberry Tea Loaf


I made my first tea loaf the other day, we really enjoyed it. The tea loaf is loaded with fruit and very little sugar so makes a great snack :-) when hubby got back from his trip last week, he took some to work and left me a note " Cake really good, love you, good morning" now thats my kind of note made my day.

Ingredients:

  • 3 oz of butter
  • 8 oz of self raising flour 
  • 2 oz of sugar
  • about 1/2 cup of blueberries or fruit of choice dried would work too
  • 2 mashed banana's
  • 2 eggs
  • 2 teaspoon of honey
  • a handful of chopped walnuts 
Method:

  1. grease a loaf tin 
  2. rub the butter into the flour until it looks like bread crumbs
  3. then mix in the sugar, bananas, eggs and honey 
  4. add to baking tin and stir in blueberries level with a knive, and top with chopped walnuts
  5. bake at 325 for one hour until risen and golden brown and a knifes out clean
  6. enjoy

  4. I like tea loaves or tea bread and always reduce the sugar as to me the added fruits are sweet enough.
