Strawberries and Cream Pancakes

I was recently tweeting with Beth from  @omgyummyblog , Karen from @globetrottings Orly @yumivore, about a link to pancake recipes from the New York Times and we go to talking about pancake day which is actually March 8th this year in the UK. I grew up celebrating pancake day which is the tuesday before lent or Shrove tuesday. Because folks would often give up butter, eggs and sugar for lent pancakes were made to use them up. I have fond memories of my Dad making pancakes and me and my brother learning to flip them and eating them with sugar and lemon oh so good. 

After reading the history for this post, I came to know about a fascinating pancake race that occurs every year in the English town of Olney it is said the first race started in 1445 when townswoman late for the Shriving service at the parish church, ran with a pancake pan in her hand! The race draws hundreds to compete each year running from the Market place to the church with competitors trying to toss pancakes along the way.

There were also funny superstition's with the pancakes, in the Midlands the first one was feed to the chickens to help them be fertile throughout the year! also the first ones were marked with a cross to ward of evil

I thought it would be fun to make a strawberry and cream version to remind me of a British tea room, it worked really well simple fill with devonshire cream and strawberries, pancakes are also wonderful with golden syrup, lemon and sugar or nutella. 





Ingredients:
  • about 2 cups of all purpose flour
  • 1/2- 1 cup milk 
  • 2 eggs 

Method:

  1. whisk flour, eggs and milk together until you get a nice smooth consistency a little runny to make nice thin crepes, sometimes you may need to add a little more milk
  2. heat a pan and lightly cook on each side turn over and serve warm 
  3. fill with devonshire cream and fresh strawberries

  6. what an interesting information about the pancake race... for some reason when i made nuttella crepe this morning i thought about you.. remember you posted a crepe in your fb wall months ago, and ever since then i've been making crepes more often. you don't realize how easy it is until someone does it or tell you.

A church nearby always has a pancake supper that day- it's easier to go there than it is to make my own, and they're always delicious. :) (I'm not a great pancake maker.) I love your strawberries and cream pancakes- they'd be right down my alley!

  29. I just discovered on twitter it is Pancake Day which I think is a silly way to start off national nutrition month, so maybe some pancakes with fruit on top would be an appropriate way to kick it off this year.

  41. Ooooh, have you ever tried Swedish pancakes? I'm from MN and thanks to some close Swedish buddies, I grew up on these. We ate them with butter and powdered sugar.

  46. Rebecca, I truly enjoyed this cultural story behind the pancakes in UK prior to Lent. My husband prepares pancakes every Sunday morning before church and often we make fruit adjustments depending on the season. As a Protestant, he would never, ever give up his pancakes on Sundays. As a Catholic, I could give up pancakes (more so for dietary reasons, my bad!), but I don't think it would ever be easy to give up these strawberry and cream pancakes. How delightful! --I'll make sure that I give this recipe to my husband. He will SO appreciate it! Thank you!

    Seriously, I'd been seeing a lot of tweets about pancake day, but I thought we'd just *had* pancake day. I didn't know about Pancake Day in the UK, so thank you for teaching me something. I'm always happy to find uses for sugar, butter and eggs! =D
