Easy Beef Stew


Tis the Season for soups and stews :-) I made this beef stew recently its been on Chow and Chatter before but worth sharing again, I learnt it from my Mum its easy to make and perfect healthy comfort food.






Ingredients:

  • One medium Rutabaga chopped or Swede to us Brits - I bet pumpkin would also be wonderful
  • 2 chopped carrots chopped
  • one large onion chopped
  • 4 carrots chopped
  • one large pack of stewing beef
  • 2 tablespoons of Herbs de Provence (my touch :-)) 
  • 4 cloves of chopped garlic 
  • one liter of beef stock
  • flour to thicken
  • 1/2 a cup of fresh chopped parsley

Method:


  1. saute the meat, garlic and onions in olive oil for 5 minutes to brown, coated with a little flour
  2. add vegetables with herbs de Provence and a beef stock 
  3. turn down to a simmer for about 2 hours
  4. just before serving thicken with corn starch
  5. serve with mashed potatoes

  4. There is nothing better than slow roasted beef and vegetables for a comforting meal during the fall and winter. My mother made hers much the same way ;) I love the addition of Herbes de Provence!

  31. I love beef stew and I love that you paired with mashed potatoes. I would have never thought of that, but boy does it sound good. The potatoes must sop up all of that goodness. Thanks for sharing this. My daughter will be very happy. Beef stew is one of her favorites too:)

  34. I converted an assisted living kitchen from frozen to fresh back in the late 1990's and one thing I remember...the men could smell me making beef stew, they would all come hang out by the entrance waiting. My mom made the best, so I also picked that one up!

    I am in the mood for Shepard's Pie now, why is that, lol!
