Easy Asian Noodles with Vegetables



Heres a lovely and super simple Thai inspired noodle dish, can be loaded with veggies and any desired meat and great for toddlers. Love these kind of meals when I am running low on groceries :-)




Ingredients:

  • one cup of raw shrimp
  • 1/2 a head of chopped broccoli
  • 3 cloves of chopped garlic 
  • some minced ginger about a teaspoon
  • 1/2 cup of mixed frozen vegetables
  • 1/2 a chopped red onion
  • 2 small chopped carrots
  • 2-3 tablespoons of Pad Thai sauce
  • 2 eggs 
  • one tablespoon of fish sauce
  • one pack of chinese noodles
  • a little chopped cilantro 
Method:

  1. saute the onions, garlic and ginger in canola oil for 5 minutes
  2. then add all of the vegetables and shrimp for another 5 minutes on a high heat in a wok, scramble the eggs into the mixture
  3. add the sauces and cilantro stir fry till cooked (al dente)
  4. mean while boil the noodles for 5 minutes and combine
  5. its that easy ;-)
My friend and her little 16 month old (who loves my food by the way!) and Jasmine and I are headed to Asheville on Wednesday on a girlie trip to enjoy the fall colors and hope to meet the lovely Sommer from A Spicy Perspective!

  6. Mmmm..I love easy Asian noodles! It's right up my ally! I still have not made anything from the Thai Kitchen cookbook that I won on your blog yet! I will, first I have to buy some the right Thai Kitchen products. Everything looks good!

    Do you recommend a special brand for the Pad Thai sauce. I always see them at the Asian market but there are so many and I am know sure how they will taste.
