Bean and Corn Salad



This is a super simple summer salad great as a side dish or lunch. It would also be prefect for taking to work or road trips. Tasty, healthy and satisfying what's not to love :-)

Ingredients:

  • one ear of fresh corn cooked and corn taken off the cob, I just used a sharp knife
  • one can of Northern beans, drained and rinsed 
  • one can of kidney beans, drained and rinsed 
  • 2 sprigs of fresh oregano finely chopped
  • 1/4 cup of fresh basil finely chopped
  • olive oil, about 2 tablespoon just enough to coat beans
  • 3 cloves of finely chopped garlic 
  • 1/2 a red onion finely chopped
  • salt and pepper to taste
  • a sprinkle of Italian herbs 
Method:

  1. simple combine all ingredients and serve
  2. it keeps well in the fridge for a few days

  1. I like the recipe. I would add cherry tomatoes but that is because I have about 6 bushes full right now. lol I will try to make this for my family soon.

  23. I've never been much of a bean eater, unless it's sweetened adzuki bean paste, which then would be a dessert. I've always been meaning to try making my own bean salad. This looks simple and easy enough! :-)

  25. Love bean salads, like the basil here. I always go mexican-ish and do cilantro/avocado. I made a shrimp ceviche last night with those ingredients.

  29. Very nice to add 2 kinds of beans. This is very simple yet very nutritious and lovely looking. I need my kids to get used to simple salad like this. I was thinking that if they eat salad (leafy raw veggies) with any kind of dressing it's okay...but they should get used to simpler salad which they can actually taste individual ingredients.
