Roasted Tomato Sauce with Penne




This is a wonderfully easy pasta dish that reminded me of one we had in Italy, a simple pasta with a tomato sauce was often what we ordered for the kids. I adore the simplicity of Italian food and miss it since being back. But we can cook good food at home and smile with the amazing memories. 




Ingredients:

  • 3 cloves of garlic
  • 1/4 red onion chopped
  • 8 cherry tomatoes
  • 3 large tomatoes chopped 
  • 1/2 tablespoon of olive oil 
  • a dash of salt 
Method:

  1. add the garlic, tomato and onion to a cookie sheet and roast for 15-20 minutes
  2. remove from oven let it cool and peel the tomato skins, they will come of easily after roasting
  3. blend the tomatoes, onion and garlic
  4. boil the penne til al dente and mix with sauce
  5. serve with a simple green salad

  1. Fabulous and simple, have never tried roasting the tomatoes and blending to make a sauce. Must kick the habit of jars. Sounds lovely and easy for a week day meal. Yum!

  9. I love roasting tomatoes and other veggies before pureeing them into a sauce.... the flavors are so rich and deep and pronounced. This sounds wonderful. Wish I were in Italy...
