The other day on the facebook page the lovely Beth Anne mentioned to me that she often mash's avocado with egg I remember thinking what a genius idea. So here it is a simple egg mayo, sandwich mashed with avocado. I also added freshly home grown lettuce, tomato and cucumber.
So next time you make an egg mayo sandwich just use a teaspoon of mayonnaise and about 1/2 an avocado to a couple of eggs, for an extra nutritional punch with vitamin E, healthy monounsaturated fats and vitamin C, and folate with your protein rich eggs.
