Polenta Crusted Green Tomatoes



So I am still waiting for my tomatoes to change from green to red, not sure if they will :-), I added a picture of them to the chow and chatter facebook page and a few folks suggested I made fried green tomatoes with them. I live in the US South, Winston Salem NC and have eaten them at restaurants and thought why not. Since I am a tad chicken with frying foods don't like the hot oil I decided to grill them, and they actually turned out pretty good.

Simple Meringue with Fruit




I adore meringue simple to make, sweet, crisp and can be a little gooey in the middle. One of the dishes I really wish I had eaten in Australia was pavlova, often regarded as its national dessert. 
This summer treat is a cheats version :-), simply make some meringues and eat with a good ice cream and fresh fruit.

Salmon over Spaghetti al Limone



I made this Spaghetti al limone recently from The Slow Roasted Italian, I didn't tweak the recipe as she is the pro so followed step by step, super easy and packed with lemony goodness. 
I decided to add salmon, lightly poached with sauteed spinach thats the dietitian in me making a balanced meal :-)

Watermelon and Feta Salad


I am sure you have seen this salad or variations of it in the blogging world, or have it on your table but its a new one for me :-), can't stress enough how much blogging inspires me to make new dishes. 
This super simple salad, shouts summer and I adore the pairing of the sweet watermelon and the salty feta so so good.

Guest Post: Frogs in a Pond



After tweeting one of my craft posts, Frogs in a Pond, Maureen from Orgasmic chef mentioned that in Australia they make a little frog in a pond for kids parties and she kindly made one to show us, how cute is this. I love kids parties I was chatting with my Dad yesterday about what we plan to do for Jasmines and he told me as a kid one of his friends Mum's would make little boats out of a bread roll with ham as a sail. I remember my Mum made some amazing birthday cakes a train once for my brother. So lets make kids birthday's special with fun little treats to give lasting memories. I have recently been making Jasmine sandwich's with cookie cutters I have flowers and a sheep so far :-)

Greek Milk Pie -Galatopita



I had a good Greek friend at University and she introduced me to milk pie as she called it. I remember having my food service placement in a school kitchen and proudly sharing the recipe with the kitchen supervisor. Thats what good recipes are all about sharing, thats why food blogs are so well read and loved. I couldn't find the original recipe, I have been out of university 10 years wow time flies so I based it on this blog, I used polenta as I didn't have semolina and used all spice in place of cinnamon. I was also happy as hubby loved this recipe. The name is funny but honestly you won't regret giving it a try, it makes a wonderful flan, custard like dessert which is heavenly served with honey.

Heirloom Tomato and Squash Risotto


I made this summery risotto recently with heirloom tomatoes and summer squash, its easy to make and bursting with the fresh taste of summer. Be sure to enjoy all of the in season fruits and vegetables in your area. I would say in North Carolina we are blessed with a great variety of local produce and stone fruits so make the most of these gifts of summer :-)

Craft: Foil Boats


With this crazy hot weather, we have been doing more crafts, the other day we made paper boats and man it wasn't that easy to make them, went through a lot of paper, but once you get the hang of them its all good. Our little one would color the paper and I would fold.

Bean and Corn Salad



This is a super simple summer salad great as a side dish or lunch. It would also be prefect for taking to work or road trips. Tasty, healthy and satisfying what's not to love :-)

Ingredients:

  • one ear of fresh corn cooked and corn taken off the cob, I just used a sharp knife
  • one can of Northern beans, drained and rinsed 
  • one can of kidney beans, drained and rinsed 
  • 2 sprigs of fresh oregano finely chopped
  • 1/4 cup of fresh basil finely chopped
  • olive oil, about 2 tablespoon just enough to coat beans
  • 3 cloves of finely chopped garlic 
  • 1/2 a red onion finely chopped
  • salt and pepper to taste
  • a sprinkle of Italian herbs 
Method:

  1. simple combine all ingredients and serve
  2. it keeps well in the fridge for a few days
