Swedish Style Prawn Sandwich



We often ate this sandwich in Scandinavia it was found in many cafes in Sweden and you may have even had it in Ikea :-), its very simple to make and makes a boring sandwich into one with pizazz. Do you like the little Swedish flag? I brought it all the way back from the cafe in Särdal, Sweden. We drove up some lovely country roads off the highway and stumbled on this beautiful old windmill cafe and had to stop for lunch. This was on the menu, it was here I saved a little flag from our meal as I knew it would come in handy later. If your ever on the West Coast of Sweden look this place up you will be in for a treat, friendly staff and it has a delightful gift shop next door. The region is famous for natural soda, apple, strawberry and more. It even has a little cake named after it, I think all towns need one of those. 



Ingredients:

per sandwich 

  • one slice of good whole grain bread
  • a handful of cooked shrimp, get good quality I found some wild caught from whole foods
  • one tablespoon of mayonnaise 
  • one boiled egg sliced
  • a little fresh basil or dill thinly sliced 
  • a little fresh lemon juice and a slice of lemon for garnish
  • a few slices of cucumber 
  • a handful of lettuce 
  • salt and pepper to taste 
Method:

  1. spread the mayonnaise on the bread, add some lettuce
  2. then add the prawns to one side and the sliced egg to the other 
  3. add the cucumber and lemon to the top to garnish
  4. sprinkle with lemon juice, herbs and a little salt and pepper 
  5. enjoy
