Tapioca Pudding and #Welcome2012






So the bridal shower we all did for Nelly was so much fun Sanjeeta decided we should all do another for new year, with a new recipe and a look back at our favorite recipes from last year. This year has been amazing for our family with the arrival of our son, we are now blessed with a boy and a girl and couldn't be happier, parenthood is a fun ride:-) 


So here's a new recipe for you - when my Mother in Law left in the summer she left a bag of tapioca pearls and me being me, I decided I was going to have fun learning new recipes with them. I made a tapioca pudding first it was delicious and my toddler loved it I think she was fascinated by the little balls inside. Tapioca is basically a starch made from the cassava plant and is a great thickening agent. Stay tuned for another tapioca recipe using peanuts and spices a tasty Indian snack.

Ingredients:

  • one cup of tapioca pearls
  • about 2 cups of milk
  • a handful of raisins
  • a few nuts to garnish, I used cashew 
  • 2 tablespoon of golden syrup 
Method:
  1. soak the tapioca pearls overnight
  2. then boil about a cup with 2-3 cups of milk for 7-10 minutes 
  3. add the golden syrup and raisins 
  4. and serve
tip - it tends to solidify on sitting to have more, measure out desired portion heat for 30-60 seconds in microwave and add a little extra milk.
