Carrot and Corn Fritters



Here is another fritter recipe, its a little late in the season as the corn is finishing as we head into fall, but frozen would work just as well. Its a simple and healthy recipe and I loved the sweetest of the corn in these. 



Ingredients:

  • one cup of cooked corn I boiled fresh to use
  • one large carrot grated
  • one egg
  • about 1/4 cup of flour or just a enough combined with the egg to hold it together 
  • salt and pepper to taste
Method:

  1. combine the egg, flour, corn and carrot and form patties
  2. heat a little olive oil and lightly pan fry on each side for about 3-4 minutes 
  3. enjoy



and had to share these pictures of the kids getting their hair cuts, look at the wee man in the mirror 


first hair cut, It was a challenge to keep him still :-)
