Salmon with Sauteed Spinach over Quinoa


I recently made this for dinner, easy to put to together nutrient rich and tasty, hubby and kids approved :-) I even made a little milk sauce and blended the spinach and salmon in it for my baby :)



Ingredients:

  • 2 salmon fillets - Wild Alaskan 
  • One pack of quinoa I often use boxes such as Near East for ease or can make plain
  • 2 large handfuls of spinach 
  • 3 cloves of garlic 
  • salt and pepper to taste 
  • 1/2 a teaspoon of Italian herbs 
Method:

  1. marinate the salmon in olive oil and herbs for about 20 minutes 
  2. heat a little olive oil in a pan add salmon and poach with the lid on for 3-5 minutes 
  3. slowly add the spinach and let it wilt, it will cook nicely and be flavored with the garlic 
  4. meanwhile cook the quinoa they often come with a seasoning packet I use 1/2 to limit sodium. 
  5. cook salmon and spinach 3 more minutes and then serve :-)

  3. I haven't tried out quinoa yet. It is a nice bed for salmon. I love the garden. I too have an interest in gardening. Learn right now about permaculture and rain garden.

  21. Here I am again Rebecca, getting more great cooking ideas from your blog. I enjoy a good salmon. Unfortunately my husband doesn't like fish, but this will not stop me to go solo on this and prepare me a great salmon. Thanks again for the great idea.
