Anchovies and Spinach with Linguini



Anchovies are an ingredient I haven't used before, I always wondered how these little fish melted away and made a tasty sauce. So I made this simple pasta dish, super easy and tasty, must admit not really my cup of tea but hubby liked it :-) 





Ingredients

  • Salt to taste
  • 2 tablespoons extra virgin olive oil
  • 4 large cloves garlic, thinly sliced
  • one small can of anchovies with capers
  • little pinch of red chili flakes
  • one cup of spinach 
  • handful of linguini 
  • Freshly ground black pepper.

Method


1. cook the linguine in salted water for about 7 minutes until al dente, keep some of the cooking liquid
2. heat the olive oil add the garlic, anchovies and red pepper flakes, slowly reduce heat and stir, the anchovies will melt into a paste
3. stir in the spinach and saute for about 3-4 minutes
4. then add pasta with a little of the cooking water to form a sauce and some freshly ground pepper
5. serve

  2. It seems like people either love anchovies or they don't. I personally love them! Opened a can tonight and put a couple, diced, in a Caesar salad. Such a yummy little burst of flavor :) I'll bet your pasta dish was good.

  7. Aww...Sorry to hear it is not your cup of tea. I do like anchovies with my pasta or pizza. Especially good with pasta puttanesca. Have not cooked that in a while. Maybe I should make it for dinner :)

  9. I am a real fan of anchovies and was surprised by how they melt away into your saute pan. However, I believe you used far too many of them, and that might explain why the dish was not overwhelmingly appealing for you. If you try it again (just to keep the hubby happy) use only 1/2 can. Don't tell him. I'll bet he'll still love it - and you might too.

I've honestly never cooked with anchovies and never really had a desire to ;) But since I love pasta so much, maybe if I grated in a little parmesan cheese over the top (yes with fish), I could fall in love. Or at least swallow. Congrats on using these and making something your hubby enjoyed!

  14. I use anchovies in several favorite recipes but the flavor is very subtle. I had fresh ones in Italy and thought they were delicious. It's one of those things that can be either very delicious or way overpowering.

  15. I like to use the anchovy paste in place of the anchovies in a tin. The pasta looks wonderful. Glad your hubby liked it:)
