Vegetable Pulav


Here's a super easy version of vegetable pulav, all you need is some spices, frozen vegetables and rice combine with a boiled egg and you have a quick tasty meal on the table in a jiffy.



Ingredients

  • a few curry leaves but can omit
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder 
  • about 3 cloves 
  • one stick of cinnamon 
  • one cup of basmati rice
  • 1/2-1 cup mixed frozen vegetables
  • 2 star anise
  • a pinch of cumin seeds
  • a few coriander seeds
  • 1/4 teaspoon masala powder
  • one dried red chili or more if you want it to be spicier 
  • 1/2 a teaspoon ginger/garlic paste
  • 1/2 red onion thinly chopped
Method:

  1. heat a little canola oil in a pan
  2. add the spices, curry leaves, chili, ginger garlic paste and red onion saute for 5 minutes
  3. then add vegetables cook a little, 3 minutes
  4. add rice and 3 cups of water cover and let it simmer on a low heat for about 20 minutes until all the water has evaporated
