Turkish spiced crab cakes





I adore crab cakes one of my favorite foods in America, especially the ones in Maryland. It wasn't something I remember really eating growing up so when I moved here was often an item we would order of menu's, also buy ready made in the store. Its actually really easy to make them and the flavor combinations can be endless, you can stay American and use old bay seasoning add Asian flavors to them or with these I added a Turkish spice blend to it. They make a great light lunch over greens or as a main meal with cous cous or quinoa. 

Ingredients:

  • 7 wheat crackers smashed
  • One teaspoon Turkish spices
  • 4 small peppers finely chopped
  • 3 spring onions chopped
  • 4 cherry tomatoes chopped
  • 4 tablespoon mayo
  • Handful of fresh cilantro chopped
  • one can of crab meat
Method:

  1. simple mix all the ingredients together, form into patties I got a good 6 out of it, good value :-)
  2. lightly pan fry in olive oil for about 3 min on each side until lightly browned.


Serve over a mixed green salad with a little lemon juice :-)

I am going to Kansas city this Thursday to speak at MINK a big nutrition conference I am excited but leaving my babies for the first time ever so that will be hard.

Craft: Finger Print Easter Eggs


We made these Easter eggs today, I found it on an app Martha Stewart Eggs I loved the idea of finger prints as even little kids can join in, with Easter coming up these would be a fun family craft. 
Simple add a teaspoon of white vinegar to a bowl, about 20 drops of blue food coloring and enough water to submerse the eggs. If you also want to try making ones with a marble effect, add a little olive oil to it and mix. See the clip below and the look on our sweet girls face.

Sole Stuffed with Spinach and Arugula



I made this wonderful fish dish recently, you lightly saute spinach and arugula with garlic and onion and then roll sole around it and cook en papillote, its fun to make and looks really pretty. I plan to make another version today stuffing it with ratatouille:-)

Tour of Reynolda House Winston Salem




I enjoyed a lovely tour of Reynolda House this morning with my parents I have always meant to tour this historic home in Winston Salem, its a landmark and full of history for some reason I had no idea it was more than an art gallery its a big property with gardens, walking trails and a delightful historic house owned by The Reynolds family. Its complete with majestic rooms, furniture, art from great American artists along the centuries, garments and cutlery and even a bowling alley, squash court and cocktail bar in the basement. I tweeted along the way and thought I would share the tweets as it gives a snapshot to the place. I highly recommend a visit.

  4. Meals were prepared in the basement kitchen then brought up to the butlers kitchen and kept warm in the steam table

There is a wonderful exhibition highlighting glamor photography of the 1920's well worth a visit :-)

In other news me and some other registered dietitians had healthy family recipes featured in the local paper, complete with interviews mine is the last one I am giggly :-)

Honey and Almond Biscotti




I made these biscotti recently always such nice treats with an afternoon tea, love biscotti I have made it a few times now, once with zucchini although this one was really a saved recipe as it was a soggy bread turned biscotti, a mocha spice one, walnut and maple the possibilities are endless. 



Ingredients: 
  • 1/2 cup canola oil 
  • 1/2 cup sugar
  • 4 tablespoon of honey
  • 3 cups all purpose flour
  • 1 tablespoon baking powder
  • a handful of almonds - chopped a little
  • 2 small eggs




Method:

1. Preheat oven to 375 and grease cookie sheet
2. beat egg, oil and sugar together, then add the honey
3. slowly add in flour and baking powder , nuts and stir it makes a thick and sticky mixture.
4. put on cookie sheet and press down to 1/2 inch thickness.
5. Bake for 25-30 min until golden brown, then remove and let it cool
6. slice the biscotti then bake for about 3 minutes on each side, in fact the word biscotti in Italian means twice baked 






Enjoy with a nice cup of tea ;-) 

My Mum and Dad arrive on Monday from Scotland very excited to see them and adore watching the kids play with Grandma and Granddad,

Lightly Spiced Fish Cakes


I made these fish cakes recently pretty easy to put together and I loved the spices added. I love fish cakes as the flavor combinations are endless. Also you could add any fish, I used sole, but cod, salmon, haddock whatever is on special would work well. 

Ingredients:

  • 1/4 teaspoon of cumin
  • 1/4 teaspoon paprika 
  • 1/4 teaspoon of coriander
  • a small bunch of finely chopped parsley
  • a pinch of turmeric 
  • 2 cups of mashed potatoes 
  • 1/2 cup of panko
  • 4 filets of sole lightly poached in one tablespoon of butter
  • salt to taste
Method:

  1. boil and mash the potatoes, add a little milk and butter and keep to one side
  2. lightly poach the fish and use a fork to make it into flakes
  3. add the herbs and spices to a bowl then add the mashed potato and fish 
  4. form into patties and coat in panko
  5. lightly pan fry in olive oil for about 3 minutes on each side until lightly browned
  6. enjoy with a little fresh lime juice 
  7. they can be eaten with salad, cous cous, rice or as a starter
