Spicy Sauteed Butternut Squash


This is a fun way to prepare butternut squash or any pumpkin with an Indian twist. You simply roast it first dice and saute. I have been having fun creating new recipes with them I recently added to cous cous  I have also made a barley salad with it and stay tuned for a spicy pumpkin soup. 




Ingredients:

  • one small butternut squash 
  • a little olive oil, salt and pepper to add to it as roasted
  • 1/2 an onion chopped
  • 2 cloves of garlic chopped
  • salt to taste
  • a few cumin seeds
  • a pinch of mustard seeds
  • one tablespoon of frozen coconut 
  • a pinch of garam masala powder
  • curry leaves if you have them
Method:

  1. roast the butternut squash in half, with a drizzle of olive oil and salt and pepper in an oven proof dish, along with a little water for about 20-30 min at 400 until soft
  2. allow it to cool and then cut into pieces
  3. heat a little oil and pop the mustard seeds then add the onion, garlic, curry leaves if available, the cumin seeds and saute for 3- 4 minutes 
  4. then add the butternut squash, with a little garam masala and salt to taste 



This would actually make a fun side dish for thanksgiving :-)

I am planning to work a company health fair this week with a colleague will be fun to have my dietitian hat on for a day, then later in the week driving to the pretty Asheville to give a talk on branding and social media to dietitians. Always nice to work as able and stay home with kids a blessing for sure.
