Orange and Chocolate Chip Muffins




These are fun little muffins and a great way to use winter citrus, not too sweet and nice for breakfast. One of my favorite parts of visiting our family in Southern California was seeing the citrus growing around Redlands. We didn't find any particular farms to tour but you can park and take pictures of the grooves. If your lucky you may come across folks selling it on the road side too :-)

Ingredients:

  • zest of one large navel orange or orange of your choice or two small clementines
  • plus 1/2  cup juice and bits 
  • 126g sugar about 2/3 cup
  • 75ml canola oil 1/4 cup
  • 2 small eggs
  • 50 g oats about 1/2 cup
  • 200g plain flour about 1 1/2 cups
  • 2 teaspoon baking powder 




Method:

  1. heat the oven to 350 F
  2. whisk the orange zest with sugar, oil and eggs, stir in the juice and the oats 
  3. add the flour, baking powder and a handful of chocolate chips 
  4. spoon into the baking cases and bake for for 20-25 min until golden in color and a knife comes out
serve warm, they are quite dense and best eaten the same day :-) 




I only wish this was my back yard :-) wouldn't it be cool, hubby teases me that a cross country move to have citrus trees in the garden is a bit too much though
