Meyer Lemon Cake


This cake is a simple lemon cake inspired by Dom's Mums Lemon cake I just used Meyer lemons. I love these lemons and only really got hooked on them since moving to America. Its not just me who loves these lemons but Ozoz from Kitchen butterfly made a wonderful bunch of recipes with them I especially love this one Chunky Meyer Lemon Caramel Sauce  and she also wrote a wonderful post dedicated to them, did you know they are named after Frank Meyer, an employee of the U.S. Department of Agriculture who brought the fruit to the United States in the early 1900s, after discovering them in China.


Ingredients:

  • 6oz sugar
  • 4oz butter 
  • 6oz self raising flour
  • 4 tablespoons milk
  • grated rind of 2 Meyer lemons


Glaze-

  • juice of one lemon
  • 2 tablespoon of sugar 

Method:

  1. cream the sugar and butter until fluffy then slowly add the eggs and flour
  2. add the lemon rind and the milk
  3. bake at 350 for 45 until golden in a medium loaf pan
  4. heat the lemon juice in the microwave for 2 minutes then add the sugar pour over the warm cake
  5. enjoy






Have a sweet start to the week everyone, today we had the Joy of seeing our sweet babies singing in the church as part of the pre school spring program, adorable. This is the last week of pre- school in fact the school is closing due to lack of enrollment. Pine Groove Weekday school has been a blessing to our family, the teachers are truly wonderful and really care for the kids. It's so sad wish I could have found the kids to enroll, give a teacher a hug this week, they enrich our children's lives and plant seeds of self worth and learning truly priceless.

  10. I love this kind of cake. I used to have it with syrup or sauce when I was a child. Otherwise it felt too dry. I quite like the softness of it. Many thanks.

  22. Love, love Meyer lemons too. In cakes they are divine. I was honored to have a guest post for Ozoz on Meyer Lemons. This past season my tree produced well over a 100 lemons ( thinking it may have been closer to 200).

    Loved Ozoz's post and love this one too.
