Asian Minced pork, Vegetables and Noodles


This is such a great dish it was inspired by a lovely blog Eating Pleasure - Little Inbox based in Malaysia, one of my favorites for Asian recipes. The original recipe called for black fungus which I didn't have and not really sure where to find it.  I may even go as far as to say its one of the best noodle dishes I have made, following Authentic food blogs from different area's of the World makes all the difference in taste compared to someone from another countries spin on it. Just my humble opinion reading food blogs from around the globe and cooking from them makes our meals so much more fun.




Ingredients: 
  • one pack of wide soba noodles 
  • one lb minced pork
  • 5 stalks of chives, chopped
  • 2 small carrots cut into strips 
  • 3 cloves of garlic, peeled and chopped
  • 1/2 red onion chopped
  • 4 small mushrooms sliced 
  • one floret of broccoli cut into pieces
  • a handful of frozen peas 


sauce:

  • 3 tbsp of dark soy sauce
  • 2 tbsp of oyster sauce
  • 1 tbsp of chili paste
  • dash of white pepper powder 
  • 1/2 teaspoon ginger/garlic paste


Method:

1. Heat up oil in a wok.
2. Add minced pork, ginger/garlic paste and onion and saute for 5-7 minutes until nearly cooked and separated 
4. Add mushroom, carrot, broccoli and peas and stir fry for a few minutes
5. meanwhile cook noodles as directed and set aside 
6. Add sauce to meat and vegetables stir fry for 7-10 min and then mix in noodles 
7. lastly add the chives to the mixture for a couple of minutes and enjoy

  8. I am definitely saving this Rebecca - love this noodle dish: vegetables, a little minced pork and all simply dressed. But filled with flavor. And hearty enough for February in MN.

  17. what a lovely noodle dish. This would be something my kids would ask for all the time. :) They don't care much about rice but they LOVE noodles. Thanks for sharing.
