VEGETABLE AND CHICKPEA CURRY



This is a tasty and simple recipe, I love having Caribbean curry powders on hand, this is fun as a dish with rice or as a side dish.


Ingredients:
  • 1/2 a red onion
  • 2 cloves of chopped garlic 
  • about 10 sliced mushrooms
  • one small chopped zucchini 
  • a couple of handfuls of pea tendrils
  • 4 chopped tomatoes
  • one can of chickpeas
  • one teaspoon of Caribbean curry powder
  • salt to taste

Method:

1. Sauté onions, garlic, mushrooms, zucchini, pea tendrils, salt, and one teaspoon of curry powder for about 7-10 min 
2. let it reduce down with about 4 tomatoes and a can of chickpeas
3. Simmer for 10-15 min. 
4. enjoy
