Zucchini Soup

I had lots of zucchini and remembered making a zucchini soup a few years ago, so thought it would be fun to make and added some mushrooms. This is simple to make and flavorful. 


  • one small box of mushrooms chopped
  • 1/2 an onion chopped
  • 4 cloves of garlic chopped 
  • 1-2 zucchini chopped
  • 2 cups of vegetable broth 
  • salt and pepper to taste 
  • 1 tablespoon of butter
  • one cup of water if needed
  • 1/2 teaspoon Italian herbs 

  1. sauté the onion, garlic in the butter 
  2. add the mushrooms and zucchini and herbs, continue to sauté for about 7- 10 minutes until zucchini is soft
  3. then add the stock and boil for 10 minutes then blend 
  4. return to pan and add desired amount of water depending on the thickness of the soup you like.
  5. season with salt and pepper, add edible flowers or croutons as garnish. 
  6. enjoy
