Lentil and Vegetable soup



This simple soup was inspired by my pal Emma Carder a wonderful dietitian based in the UK, this  vine using a pressure cooker motivated me to make this soup. We often make dal - lentils in the pressure cooker so the light bulb went on, why not do this for soups.



Ingredients:
  • 4 small carrots chopped
  • 3 cloves of garlic chopped
  • 1/2 a red onion chopped
  • 2 stalks of celery chopped
  • one cup of French green lentils 
  • 1/4 teaspoon of garam masala 
  • salt and pepper to taste 
Method:
  1. saute the onion and garlic in a little oil for about 5 minutes then add the vegetables and lentils, garam masala and 4 cups of water, close the pressure cooker lid and let it have two whistles 
  2. boil a little longer depending on how cooked you want the lentils,  I like them with a little bite to them
  3. add a little chopped parsley to season and to serve 
  4. enjoy a lovely nourishing soup
