Spiced Sole with Seasonal Vegetables



As summer produce from your local farmers market or garden starts to wind down, be sure to enjoy this beautifully simple dish. I lightly pan fried sole with some Turkish spice mix or any desired spice blend would work, grilled some zucchini and squash and had a salad. Every season has its gifts as we look towards fall in our part of the world with wonderful pumpkins and winter citrus. Its fun to embrace seasonal eating as often produce is cheaper and more flavorful in season. 



Ingredients:


  • a few pieces of sole I used 6 
  • 1/2 teaspoon of a desired spice blend 
  • one - two large tomatoes 
  • 1/4 cucumber chopped
  • one small zucchini sliced 
  • one small squash sliced 
  • one small patty pan squash (we grew this) sliced 
  • salt and pepper to taste 
  • a dash of olive oil
  • a dash of balsamic vinegar 
  • a small box of cous cous - I add mixed frozen vegetables as the water is boiling then the cous cous 
  • a few slices of orange or lemon 
Method:

  1. heat the grill either electric or a gas grill outside and grill the vegetables only takes a couple of minutes per slice, coat with a little olive oil and salt and pepper
  2. coat the fish with the spices 
  3. heat a pan add a little olive oil and lightly pan fry the fish, its a very thin fish and will only take a few minutes to cook, give about 3 min on each side
  4. squeeze a little orange or lemon juice over the fish and garnish with a slice 
  5. meanwhile cook some cous cous, a grain like bulgur wheat or rice 
  6. slice some heirloom tomatoes and cucumber add a little oil and vinegar 
  7. and enjoy a quick tasty and light meal
