Easy Peasy Tomato Soup


I am surprised I hadn't realized how easy tomato soup is to cook, wonderful to make a big pot and eat for lunches. We have had some strange weather lately and quite a few snow days poor wee kids have to make them up. But seasons are wonderful and so excited to see more flowers and the blossoms and warm days of spring.

Ingredients:


  • 3 cloves of chopped garlic 
  • 1/2 a red onion chopped
  • 2 cans of tomato's 
  • one tablespoon of butter and a dash of olive oil
  • 1/2 teaspoon Italian herbs
  • a sprinkle of red pepper flakes
  • freshly chopped basil about 1/4 cup 
  • a few slices of parmesan 
  • a slice of bread
  • salt and pepper to taste 
Method:

  1. heat the butter, onions and garlic and sauté for about 5 minutes
  2. then at the herbs and two cans of tomatoes
  3. allow it to simmer for 20 minutes 
  4. blend 
  5. with a hot panini press add grated parmesan to a thin slice of bread and heat to toast and melt the two to use as a crouton
