Mexican Wedding Cookies



I have always been fond of Mexican Wedding Cookies, and I buy something similar at the Greek festival when I saw the recipe on the lovely Mely's blog - Mexico in My Kitchen it looked pretty straight forward so I thought why not. I simply halved the recipe as didn't want to make many. To my delight they turned out wonderfully hats of to Mely. It really is fun baking festive treats with our wee ones this time of year, and I love seeing blogs filled with delicious goodies and festive cheer. 



Ingredients:
  • 1 cups of pecans or walnuts
  • 1 cups all purpose flour
  •  pinch of salt
  • 1 sticks of butter 
  • 1/4 cup of confectioner sugar
  • 1/2 teaspoon vanilla
  •  1/2 cup confectioners’ sugar, for dusting.


Method:


  1. pre heat oven to 325 F, and get a sheet with parchment paper ready
  2. add 1/2 of nuts to a grinder or blender and make into a flour be careful not to over do as it turns into a nut butter :-)
  3. grind the other 1/2 of nuts into small pieces
  4. mix the salt, flour and nuts and keep to one side
  5. beat the butter and confectioners sugar until light and fluffy and add the vanilla
  6. add the flour and nuts to this 
  7. use your hands or a stand mixer and make into a dough I found it was like bread crumbs but as i started to make the small balls for the cookies, it formed well and held together, 
  8. bake for 15 minutes until light brown and the bottom is brown 
  9. allow to cool then coat with sugar
I was so excited with these, me and the wee man made them and they were perfect I am not very good at cookies, often make with the kids as we enjoy the process but they don't turn out so well :-) baking is an art for sure, have lots of respect for all the good bakers out there. 


These pretty cups and saucers are very special they are over 100 years old they were my great grandmas wedding present, my parents brought them over for me a few years ago. Sometimes take a moment and use lovely items :-)
