Citrus cupcakes
It has been years since I have made cupcakes these are easy and so lovely -
Ingredients:
- 4oz butter
 - 4oz sugar
 - 2 eggs
 - 4 oz self-raising flour
 - one teaspoon of orange and lime rind
 - Juice from one lime and one mandarin orange
 - 1/4 cup icing sugar
 - another 1/2 teaspoon grated orange rind.
 
Method:
- cream the butter and sugar, beat in the eggs one at a time
 - then slowly fold in flour orange, lime juice and grated rind.
 - half fill the cupcake cases and bake at 350 degrees for 15 minutes until firm, or a knife comes out clean.
 - mix the icing sugar with water and make icing add to cupcakes and sprinkle with grated chocolate and lime and orange rind
