Citrus cupcakes


It has been years since I have made cupcakes these are easy and so lovely -


Ingredients:

  • 4oz butter
  • 4oz sugar
  • 2 eggs
  • 4 oz self-raising flour
  • one teaspoon of orange and lime rind
  • Juice from one lime and one mandarin orange 
  • 1/4 cup icing sugar 
  • another 1/2 teaspoon grated orange rind. 


Method:
  1. cream the butter and sugar, beat in the eggs one at a time
  2. then slowly fold in flour orange, lime juice and grated rind.
  3. half fill the cupcake cases and bake at 350 degrees for 15 minutes until firm, or a knife comes out clean.
  4.  mix the icing sugar with water and make icing add to cupcakes and sprinkle with grated chocolate and lime and orange rind
