Carrot Pilaf




This is a super easy recipe, and a fun way to use carrots, adding shredded carrots to rice is fun and adds nice flavor and color. 

Ingredients:

  • 2 medium carrots grated
  • one cup of basmati rice 
  • 2 cups of water 
  • 1 tablespoon of Turkish spices (I got this from Penzeys)
  • one small zucchini chopped
  • 2 gloves of chopped garlic 
  • one small onion chopped
  • salt to taste 
  • a pinch of mustard seeds 
  • 1/4 teaspoon cumin
Method:
  1. sauce onion, garlic, mustard seeds in a little canola oil, with the zucchini for 5-7 min
  2. add the spices and garlic, salt to taste 
  3. then add the rice and 2 cups of water
  4. cook for about 15-20 min in a pan with a lid and try to keep the lid on.
  5. enjoy
