Thai Inspired Chicken and Noodle Soup


Thai inspired Chicken noodle soup, this was inspired after chatting with Maggie Perkins a dietitian on Instagram, after months of the pandemic most of us are starting to feel a tad tired from cooking and finding inspiration when I see someone sharing something tasty I ask for the recipe. 

The recipe is based on this I added different spices and some extra vegetables that I had on hand. 

Ingredients:
  • 1 tablespoon olive oil
  • one package of chicken breast cut into chunks 
  • salt and pepper to taste 
  • 3 garlic cloves chopped 
  • 1 onion, diced
  • 3 tablespoons red curry paste
  • 1/2 teaspoon of ginger/garlic paste
  •  one carton of vegetable stock 
  • 1 can coconut milk
  • 1/2 (8-ounce) package rice noodles, I added the whole thing best to add less, they expand a lot. 
  • 1 tablespoon fish sauce
  • 2 teaspoons sugar
  • 1/2 cup chopped fresh cilantro leaves
  • juice of 1/2 a lime.
Method:
  1. sauté the chicken with oil, onion and garlic for about 5-10 until nearly cooked and set aside.
  2. empty the can of coconut milk and mix with the red curry paste and ginger, sugar and fish sauce
  3. add to chicken with some mixed frozen vegetables 
  4. bring to a boil and simmer for about 10-15 minutes, in the last 5 minutes at the noodles 
  5. add cilantro to garnish and serve
  6. enjoy

  1. I dont know about you but I feel so depressed at times. I think its mostly watching the news and how reckless some people can be. THankfully it is not so bad over here but people seem to take it for granted because of it.
    Soup looks very comforting.
