Tomato and Pepper Soup


This is a simple and tasty soup using canned tomatoes, the addition of fresh basil makes a lovely summery flavor. 
I used canned cherry tomatoes this time and topped with rosemary crackers.



Ingredients:
  • 2 cans of cherry tomatoes
  • 5 small sweet peppers chopped
  • 3 cloves of garlic chopped
  • 1/2 a red onion chopped
  • a dash of white balsamic vinegar 
  • salt and pepper to taste
  • a small pack of fresh basil chopped or a handful if fresh
  • 1/4 teaspoon red pepper flakes
Method:

  1. sauté onions and garlic in olive oil with the red pepper flakes and vinegar and sweet pepper
  2. then after a few minutes add the cans of tomatoes, with salt and pepper to taste and turn  own to a simmer for 15 min, add the basil
  3. then blend
  4. enjoy
